In south Louisiana, everyone knows what a gumbo is. It's a wonderful soup made from many different ingredients that cook together and tastes like a touch of heaven. Now, the first thing you should remember about gumbo is this: each gumbo is as different as the cook. No two pots will ever taste the same. The second thing you should know is that it has to cook for a LONG time. So, when you're checking out my gumbo, please know that it's still cookin' and it will take awhile before it's done!
